This key leadership role is designed to provide both culinary leadership and operational management support at the DOUGLASS HOUGHTON HALL. In this role you will be responsible for the reputed company of both the kitchen and food service operations, reporting to the Director Dining Services. You will be responsible for managing client relations, guest satisfaction and ensuring that our food is of superior quality and presentation.Houghton is a charming city with a strong reputed company to nature, mining history, and education. Its location in the picturesque Upper Peninsula makes it a desirable destination for outdoor adventurers and those interested in exploring Michigan's heritage. • Full culinary management of food service operation to include inventory, ordering and receiving
• Knowledge of P&L accountability and contract-managed food service
• Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products
• Possesses a passion for sustainability

Preferred Qualifications:

• Must have a working knowledge of HACCP
• Three years of culinary management experience in contract foodservice with inventory and purchasing knowledge and cost control
• Extensive knowledge of culinary trends with a focus on quality, production, sanitation and presentation
• Experience with exposition cooking (high volume)
• College/University dining experience highly desired
• ServSafe certified
